Collagen is the most abundant protein in your body, it’s a major consituent of skin and bone and connective tissue. Collagen does far more than simply provide mechanical strength, it enables cells to sense and interact with their environment. For example, collagen exposed on damaged blood vessels is a signal for platelets to form a clot. Collagen fibres are made up of three protein strands carefully entwined in a repeating pattern like a braid. The enzymes which control this twisting require Vitamin C to function correctly, this is why many of the symptoms of vitamin C deficiency, most famously in the scurvy afflicting historical sailors, result from insufficient, or incorrectly structured, collagen.
