The way we consume food is undergoing a significant change. In the past ten years, the food service industry has experienced dramatic changes, with the Covid-19 pandemic further accelerating this trend. The linear model, where food producers sell their products to wholesalers, who then distribute them to brick and mortar supermarkets, restaurants, and hospitality establishments, is being gradually replaced by a fast-paced, complex digital ecosystems and distributed micro warehouses.
