The deer (Hebrew: Zvi / Zeev) often represents the name of the deceased. It was (and still is) common to use animals as symbols for Hebrew or Yiddish first names.
However, it can also have a religious or spiritual meaning: In the Bible, the deer is a symbol of swiftness, grace and longing for God (cf. Psalm 42:2).
Another possibility is the purely artistic design - the stag as a decorative element, for example in the style of the period around 1910.
