This is my usual workflow for textures of low poly models. I create models as a base for texture, from as many angles as needed. For vehicles usually it is side, front and back views, for characters front and back. Sometimes i also sculpt details.
I texture them with Substance painter, very simple materials. Less noise is better. Sometimes without real lighting, only baked or none.
I render them out with perspective or ortographic camera, depending on intented use. Slicing, dicing, mashing, scaling and paleting with Gimp.
Whole process is like hour or two depending on model. No need to have painting skills
