There are several variations of this dish shared between Chinese, Korean (jjajangmyeon), and Japanese (Jajamen) contexts. This is the chinese variant, called Zha Jiang Mian (炸酱面).
Usually the thick handmade buckwheat noodles are topped with a sauce consisting of ground pork fried with fermented soybean paste; and garnished with sliced green vegetables like cucumber or steamed Bok Choy.
Some families tend to include a fried egg or pickles as additional garnish; and it can either be spicy or not.
Vegetarian versions are made to replace the ground pork with tofu and mushrooms. Equally delicious!
