Cooking Through History: Ancient Rome

There is a famous fresco from Pompeii that depicts a dish resembling a pizza, though it predates the modern version we know today. Of course, ingredients like tomatoes were not available in ancient times, and pizza could also be served as a sweet dish. I recreated this ancient version using quince, which is ideal when glazed with honey and wine, then baked on top of a flatbread and served with walnuts. The quince’s firm texture and rich flavor make every bite feel like a taste of history. Who says history isn’t sweet? :)
