More model informationNo-one really wanted this in our innoculum, but we’ve got brumale in our first Australian and New Zealand plantations. It is a hardier variety and can out-compete black truffle, reducing the value of the truffière. Brumale is considered a culinary variety in Europe and called ‘Winter truffle’ (to confuse but it costs $80 a kilo). It has a strong petroleum odour. DNA testing of certified trees now guarantees the variety you’ve purchased contains no brumale.
