Tudor Palace Furnace

A furnace within the ‘boiling house’ of Henry VIII’s Elsyng Palace, part of its flue and an external facade wall belonging to the south side of the service ranges adjacent to the palace’s outer court, excavated in Forty Hall, Enfield, by the Enfield Archaeological Society, July 2018. The boiling house was part of the industrial scale catering of the palace kitchens, and was responsible for boiling large joints of meat in preparation for roasting or incorporation into other dishes. Boiling reduced the cooking time and also made the meat easier to remove from the bone.
