Therefore, we developed a method to create a new taste and aroma by fermenting vegetables with salt or mixing them with intestines, candles, and spices, and our unique food developed in this way is kimchi. In the middle of the Joseon Dynasty, the import of red pepper caused a huge revolution in kimchi, and in the 19th century, the kimchi of today was completed.
